Cozy Crockpot Beef and Vegetable Stew Recipe Inspiration
While many slow cooker recipes often instruct you to cut, braise, brown, or even fully cook the chunk of roast you’re using, we’ve found through experience this is a step you can skip. As long as you’re going to be letting your soup slow simmer all day, it will have plenty of time to heat and thoroughly cook the meat.
So call it a time saving cooking hack if you will—just plop the organic beef roast right in the crockpot. Chop organic vegetables (or leave them whole if you’d rather). We rustic cut large chunks of fresh carrots and potatoes. No need to peel the veggies either, just wash them well and chop away.
Healthy Fact: Potatoes contain vitamins and minerals like potassium, iron, riboflavin, folate, and fiber which are also in the potato skin. So leave their peels on and don’t throw away nutrients!
Whether or not you pour in some broth is up to you. Our crockpot stews turn out savory either way. If you’re not using broth and opt for water instead, just add more spices, herbs, and seasonings. These freeze dried options are a great choice we love.
Side Point: Why are freeze dried spices and herbs better than regular jarred seasonings? Because after harvest, the freshly picked ingredient is quickly frozen and gently freeze dried which allows the plant's cell structure to remain open. When added to moisture in recipes, the herbs naturally awaken with vibrancy and aroma! Not to mention, incredible flavor.
Once the meat, vegetables, liquid, and seasonings are in your slow cooker, turn it on high and cook for 4-6 hours or on low 6-8 hours. Ensure you have at least 1 cup to 1½ cups of liquid in the pot. Once the hours have passed, to make sure the meat is fully cooked, use a fork to break the roast apart—which also spreads the meat through the stew more evenly for serving.
It’s time to grab your favorite bowl and dish it up!
Beautiful and delicious, this farmhouse style stew recipe will have you coming back for seconds. Garnish with a dash of parsley, and by the way, it pairs well with organic bread or crackers as side options.
