Whether you call them energy balls or power balls, these little rounds bites of goodness have major fall vibes in every orb you eat. They're super customizable to match your mood every time you whip up a batch.
You can choose peanut butter, almond butter, or even sunflower seed butter. You can use mini chocolate chips or cacao nibs, your choice of course! Add some chopped nuts, hemp hearts, or raisins if you'd like. Want a vegan version? Swap the honey with agave syrup for a plant based sweet that's just as tasty.

No Bake Pumpkin Power Balls Recipe
1 1/2-2 Cups Dry Oats
1/2 Cup Nut Butter (we used raw almond butter in this batch)
1/2 Cup Pumpkin Puree
1/4 Cup Chia Seeds
1/4 Cup Honey
1 Teaspoon Pure Vanilla Extract
1/2 Teaspoon Cinnamon or Pumpkin Pie Spice Blend
1/4 Cup Cocoa Nibs
Directions:
1. Stir oats, nut butter of choice, pumpkin puree, chia seeds, honey, vanilla, and cinnamon spice together in bowl. You should be able to roll the mixture into balls, so you want a texture that's soft, but not too sticky.
2. Add cocoa nibs and stir well to incorporate.
3. With a plate or serving tray ready to use, scoop a large 1-2 tablespoon size amount of dough into your hand and roll into ball shape. Set on plate and repeat with remaining dough.
4. That's it! Quick and easy—they're already ready now for you to enjoy!
This gluten free recipe can easily be doubled and the pumpkin power balls store well in the refrigerator for up to a week (or even longer in the freezer). This super snack satisfies a sweet tooth in a healthy way, while enjoying the seasonal flavors of fall.
