Fresh Lemon Cran Chia Power Balls Recipe
2 Cups Oat Flour (or quick oats pulsed in a food processor)
2 Tablespoons Coconut Oil
1 1/2-2 Tablespoons Real Maple Syrup, Honey, or Agave
1/2 Teaspoon Vanilla Extract
1/4 Cup Milk Of Choice (almond milk is a favorite for us)
2 Tablespoons Fresh Organic Lemon Zest
1 Tablespoon Fresh Organic Lemon Juice
1 Tablespoon Chia Seeds
1/4 Cup Dried Cranberries
Directions:
- Pulse oat flour, coconut oil, sweetener of choice, vanilla, milk, lemon zest and juice in food processor.
- Once well blended and sticking together, add cranberries. Allow food processor to chop them while they're incorporated into the dough.
- Transfer mixture to a bowl. Stir in chia seeds.
- Roll 1-2 tablespoon size scoops of dough in your hands to form balls.
Devour immediately or store in refrigerator to enjoying snacking throughout the week!
